if i were to breed a blue pied male amstaff with a fawn female amstaff will i be diluting the coulor genes too much?

That depends.  What colors are 3 generations back on both sides on for both the dam and sire?

Genetics is just more than the sire and dam, it's goes back to their lines.

You may get some blue fawns out of the deal but again, it depends on what's back in the family tree.
