Hi, I am about to build an insulated dog house for my 8 month old husky cross.  I've read that they grow until about one year however he has not appeared to grow in size (only weight) for the last month.  Is it safe to assume he won't grow more than another inch or two in height?  

Though he sleeps indoors, I live in the arctic so it is important I do not make the dog house too large or it won't keep him warm.
The plans I am using are below and are all based on the dogs final height.

Tough to say, but generally, you won't see much of a height increase more than 1-3 inches around this age, and generally, most dogs will simply bulk up after a year of age.  Crosses are tougher to tell sometimes, but I think you might be making a safe assumption.
