Hello.  I am the parent of a wanna-be herpetologist and/or zookeeper.  We bought her a bearded dragon at a local shop that specializes in lizards.  He's a re-home adult, we're told he's about 3 years old.  We've got him in a 40 gallon zilla cage with mesh top.  1 basking light, 1 reptisun tube light for UVB, both on top of the mesh. Paper towel substrate, poops cleaned nearly immediately. Temp  gradient is 105-85 or so, measured with a probe therm.    We mist him once daily.  He's shedding right now, poor guy, but still fairly active.  He basks, he climbs, he dances along his glass (we try to limit the reflections).

That's the background.  My question is about his diet.  We offer him mustard and endive/chicory greens with diced acorn squash daily.  Sometimes he seems to be really grooving on his salad, but usually he eats 'some' but not all.  We're using the listing from Beautiful Dragons to guide our veggie/fruit offerings.  He won't touch collard greens, he loves yellow zucchini.  Didn't go for cactus leaf, which is tough to find in Minnesota anyway!   His salad goes into his cage after his lights have been on at least an hour and comes out 2 hours before bedtime.  He's offered  gut loaded crickets for 10 minutes at lunch time, and eats 20-30 daily.  Vites 2X a week, calcium powder 5X a week.  We never leave crickets in his cage after feeding time, mostly they get shaken in a few at a time until the time is up.

I'm thinking this is backwards for an adult.  Shouldn't he be eating more greens than bugs?  Should we offer less live prey, or would that just be starving him?

Do you have any pictures of him?
I am so happy to hear that you purchased a Reptisun 10 tube bulb, that is excellent.  How far from your dragon is the tube bulb?  Remember, that the mesh/screen will filter out approximately 30% of the UVB.  If there is any way that you can mount the light underneath of the screen/mesh top, he would be getting much stronger UVB emissions.
The temperatures are fine then since you are using a digital probe.  Is the probe placed approximately where he basks for the most part?
The paper towels are super, too.  
Yes, you are correct regarding the diet.  At his age, assuming he is not underweight, he needs to be eating roughly 70%-80% reens/vegetation with 20%-30% protein/feeders.  
That is a good idea not to leave insects especially crickets in the tank with them as they will & do bite them.  
Try offering the greens as you are doing & gradually cut back on the feeders.  Adults can get by with around 50 feeders per week which is pretty generous.
The vitamins can be decreased to 1 time per week & the calcium can be decreased to 3 times per week unless he is suffering from metabolic bone disease.
