My poodle puppy (actually also part Schnauzer, we believe) loves to bite at my hands and arms -- and only mine, not my wife's. I suspect it's part affection, part seeking attention, and it doesn't hurt, though as he gets older he may not know his own strength. I want to make sure I'm not misreading this as some kind of hostility; and I'd like to know how to make him stop it.

Chances are that your puppy is just doing this because he is a bit mouthy and not for aggression.  You are right though to want it to stop now as a puppy.  Poodles are Retrievers and enjoy having things in their mouths either to feel something in their mouth or just to give them something to do.  When your dog reaches for your hand, tell him NO! in a firm voice and then give him something that its ok to hold in his mouth such as a chewie or stuffed toy.  Praise him when he takes the toy and lets go of your hand.  
If he doesn't take the toy or seems more interested in biting your hand, give him a gentle thump on his nose as you tell him NO.  

When walking or he is on the leash, have a toy with you ready to give to him.  That way, when he goes for your hand or arm, you are ready with a toy for him and you can continue on your walk.  If he will hold it, let him carry the toy on the walk.  Most Retrievers like to take trinkets with them as they walk to carry with them.  

If he really enjoys carrying things around you might think about getting him into Obedience Training.  Teach him the basics then get him into retrieving or something similar.  I think he would really enjoy it.
