I have a 2 year old yorkiepoo that has a recurring problem.  4 times in the past 3 1/2 months she has a two day spell where she is unwilling to bend her hind legs and most recently has been unable to hold down food or water.  After a couple days she is back to normal and acts as though nothing has happened.  The vet has run tests and all come back normal.  I am just curious what could come so swiftly and be so painful to her, and then leave just as quiclky as it came.  Any help would be greatly appreciated...

I am not a Vet so I can only give you suggestions on what I think it could be.  This is not a diagnosis and you might want to consult another Vet for a second opinion.

It could be a seizure, though seizures tend to last only about 2-3 minutes.  Seizures can't be diagnosed unless the dog is seizing in the Vets presents, due to chemicals that are present when the dog is seizing.  Stiff joints, shaking limbs, vomiting, urine or bowel loss, drooling, and disorientation are some signs of a on-coming seizure.  
It could be due to spine or back problems.  Does your dog jump up on furniture or down steps, etc.  You have to watch little dogs jumping from things because their bones are fragile.  
Another thing that it could be is a neurological problem.  This is a tough call and is hard to diagnose, but it happens sometimes.  

When she does start having pain, you might want to give her a baby aspirin or 81mg coated aspirin.  This will help her with the pain until her symptoms stop.
