He looks to be in pretty good condition right now, and still has plenty of tail weight.  It's hard to judge scale, but he looks like a juvenile, not an adult or hatchling.  If he does have parasites, he should tolerate the medication extremely well--the only down side to that is that you'll have to break down your beautiful setup and disinfect everything.  If that diagnosis comes back, it's best to keep him in a minimal setup on paper towel until treatment is completed, as everything has to be kept very clean to prevent reinfection.  Although the behavior you're describing sounds like he has an issue, he looks good, which means he'll probably recover easily from whatever it is, if treated soon.

This matches the possible scenario of his being in good health originally, and possibly picking something up at the distributor or pet store, which is only now beginning to affect him.

The round humidity gauge is basically junk, so I wouldn't bother with that.  Tracking humidity for a leopard gecko is nice, but not entirely necessary, if he has a good humid hide.  The round gauges are notoriously inaccurate.

Be sure to remove uneaten insects from the cage after 15 minutes to a half hour, in order to prevent them from climbing on or even biting the gecko while it sleeps (this can cause a lot of stress as well).

If he has been handled a lot, or there are loose insects in the cage, try correcting that first and see if his appetite returns--if it does then he's probably just fine.
