Disciplining our 8 week old english bulldog.

My wife and I recently purchased a 8 week old English bull dog, named Cooper, from a local breeder. Cooper will sit and whine to be held, then when you pick her up, she attacks your hand (starts bitting and chewing). She will also go after shoe strings, shoes, toes, etc. When I try to tell her "NO", she usually ignores me and continues her attack. I have also tried picking her up by the scruff of the neck. This is not very effective as she has quite a bit of loose skin and there is little effect (other than she tries to bite your hand when you do this). When you lay her on her back, with you hand on her chest to get her to calm down, she just kicks with all four feet, and tries to bite your hand. At night, she whines and barks  continuously (she is in a cage as we are trying to crate train her). She is also in her cage during the day when my wife, son, and myself are at work and school. My wife does come home at lunch for an hour to let Cooper out and to play for a while (she is never in the cage for a long time). However she still barks and whines. Cooper seems to be ignoring us, and resisting our efforts to train her. We plan on taking her to obedience school in the near future, but I am worried that she will not end up being a very good family dog. What do you think? Have we bought a dog that will be out of control? Any assistance or guidance that you can provide us will be greatly appreciated, as we really love Cooper, but are worried about her behavior. (just for the record, she does not go to the bathroom in her crate, at night or during the day, and she does use the bathroom outside when we take her out, so she is very smart and has caught on to the house breaking thing already)

You are expecting a great deal from an 8 week old puppy. She's just a baby. Keep in mind that her only frame of social reference is her siblings with whom she has done nothing but bite and growl and play rough with until you snatched her away.

She hasn't even had time to settle in yet, plus she's left alone a great deal of the day with no people and no other dogs. It's quite a culture shock for a puppy!
