All the white doves I've had, as well as some of my pigeons, have red legs and feet. I think it's just how much blood is flowing to that body area at a particular time.
Males are usually a little bit bigger than females. Males chase after their female mates and often peck at them when they want them to go to nest. Males fan their tails and their tails drag the ground when chasing their mates whereas a females' tail won't drag the ground. Females just look more feminine than males (to the experienced eye). When a bird lays an egg, it's a female (obviously)!
Watch your birds closely and you'll see the difference between the sexes.
