what sort of things should i train my gerbils to do?

Gerbils canot be trained like rats or mice. They are just too skittish to learn tricks. You can teach them to sit in a certain place to get a treat and maybe they will learn to recognize their name. Clicker training is a great way to train animals. Read about it here (a bird group, but the principle is the same):
