I have two standards.  The first is male, all brown, is about 25 inches at the withers and weighs 47 lb.  The other is all red, but is considerably larger.  Also male, is about 28 inches tall and weighs about 70 lb.  The smaller dog easily walks underneath the large dog.  Is there such a size sometimes described as a "grand" standard?  Also the coats of the two dogs are very different.  The brown's coat is thick and harsh and not especially difficult to brush.  The red's coat is extremely fine, like angel hair, very,  very soft and nearly impossible to brush.  Mattes, even with detangler, take hours to hold in check.  Is such a dramatic difference in coat normal?  The brown dog remains aloof while the red dog is extarordinarly loyal - unhappy unless he is at your side always.  Can you explain this difference in temperment?  How can I find a "large" standard in the future?

You just described a Red Poodle to a T.  The Red dogs tend to have a softer hair quality which makes it very hard to brush and it usually will lay flat rather than stand up.  
Your brown dog (which looks like a Blue in the picture) has hair that is more the show type hair.  It stands up better and takes to a brush better.  

You also described the temperment of a Silver or Blue dog, which tends to be aloof and sometimes shy.  

A Poodles height has a limit on the small end, but not on the large end, so larger Poodles are not uncommon.  I have seen some Poodles as tall as 34inches at the shoulder.  The larger dogs are called "Royal", and "Giant".  

Breeding will also have an effect on coat type, size of the dog and the temperment.  Make sure that when you look for a dog, you get to see the parents and make sure that they are what you want in a dog.  
When you find a breeder where you like their dogs, ask if they have large Poodles (from 25" up).
