2 questions, first can you tell me how to estimate a dogs age? The man at the pound guessed she is over a year, but judging by her enormous feet she has a lot of growing left.
Second, trying to keep in mind that we have no idea of her history, we are trying to be very patient but she follows us everywhere, she will sit outside the bathroom door and cry until we come out. I don't want to spoil her but she is honestly scared and upset when she can't be in the same room.

Any new adopted dog should go to the vet for a check up.  Ask the vet.  If it is a year old, it shouldn't be growing much more.  Check the ends of it leg bones.  If they have very prominent knobs, it is less than a year and still has some growing.  One of the biggest differences between a one year lab and a 2 year old one is the shape of the body.  The older dog Will have more of a barrel chest, while at a year the chest is much deeper than wide.  

It is doesn't have its adult canines, it may only be about 6 months old.  

Why don't you indulge it letting it in the bathroom with you for now.  Once she bonds more with you and realizes you won't abandon her, she may not be quite so clingy.
