my jack Russell terrier(Cosmo) plays with my boyfriends dog(Mattie) and usually tries to nip at Matties paws, she kind of runs up nips and rolls then runs away. Mattie doesn't seem to mind but I was just wondering why she does this. Should i stop her behavior?

It sounds like simple doggie play to me
and unless it is hurting or bothering Mattie, there is nothing wrong with this behavior.  If it bothers Mattie, you should stop the behavior by stopping the Cosmo BEFORE he gets to her feet.
