I recently adopted two kittens; brothers, from the SPCA, and while they've adjusted well to my house, they'll often fight/wrestle with each other.
My question is, should I stop them from doing this? Apart from these 'wrestling matches', they don't seem to be aggressive with each other, but if I leave them alone (fighting) for long enough, one of them starts crying - at which point I intervene, and seperate them.

I'm a bit paranoid that their wrestling matches will escalate into full-blown blood-will-be-drawn fights. Are they just playing, or should I continue to intervene when the crying starts up?

From what it sounds like, based on the information that you provided these boys are simply play fighting and wrestling as littermates will. The crying you're hearing is likely one boy telling the other that he's gone too far in play... I wouldn't intervene in this case because they need to teach each other what the limits of play are. Provided that you have the boys neutered around 6 months of age you shouldn't see all out nasty cat fights - generally cats that are raised together don't escalate to that point without some sort of external trigger so I wouldn't worry too much. At this point their behaviour sounds completely normal.
