how can you tell the difference between a female and a male

The way I was shown when I first started keeping piggies has always worked for me. Simply press very gently on the piggies tummy, if it is a male, a little penis will pop out.

There are visual differences between the genitles of males and females. Take a look at www.guinealynx.info as I am sure there are pictures there.
