cardboard and gerbils

is it alright for gerbils to eat and chew cardboard?

Yes, it's fine for gerbils to chew cardboard (though they don't actually eat it).  In fact, many people give their gerbils paper towel rolls and toilet paper rolls.  Gerbils love to chew these, and they use the little pieces for bedding.
