what colors would an apricot and black poodle produce?

That would totally depend upon what colors are behind each of the parents.  To give a good answer I would have to know ATLEAST what color the parents of each parent was.  It would also depend upon if the black is a true black or really a blue poodle.  Apricot carries the fading gene so you are not apt to get blacks.  Normally black is dominate to EVERY color.  If your black is a true black but neither parent were black then you probably have a non dominate black.  Which then leaves it open for other colors to come out such as blues, silvers, apricots, and creams.  It may even be possible to get a red from this combination IF the black is a true black.  If the black has a mostly black background you will probably get blacks and blues in the litter.  Now if this black is truely a blue and not a black then almost every color combination is possible as most blues carry the color gene for every color.
If you want to research and find out what colors are for the parents of the sire and dam or send me a pedigree I could probably give you more of an educated guess.  However GUESSING at colors is truely guessing until you have atleast had one test breeding to see what hidden color genes each dog might carry.  It is also possible to breed the same sire and dam more than once and get something totally different every time.
