my doberman bit a huge rat.

Question
What are the problems? He seemed to be licking the rat with exposed guts for long!!! What could now happen to treat my dog well-being??

If he didn't eat any of it then he will probably be okay. I have cats that eat wood rats with no ill effects at all. Make sure he is always up-to-date on his vaccinations, especially rabies, if he is prone to killing things and eating/licking them.

If he starts vomiting or feeling lethargic then call your vet and get him in to be seen.
