I have a male convict who has established his dominance in the tank over the female.  My question is why does he continue to nip at and attack the female when all I have read is that they are simple breeders?  She's been reduced to hiding in the top corners laying at a diagonal.

Answer
It sounds like your male is too aggressive for the female, you are going to have to separate them and possibly find a more suitable mate for either the male female.  Sometimes with cichlids, it takes a while for a pair to form.  try adding a few more females and letting him choose one, then returning the females he doesn't choose.
