Is it rude to turn on the aquarium light late at night?(the fish appear to be "sleeping/resting").
Do fish follow a day/night cycle like we do?

It does bother them to turn on the light from total darkness and could possibly scare them enough injure themselves. What I usually do is turn on a light in the room for a few minutes first. Then it isn't quite such a shock. Do the same when turning off the lights too. Leave a light on in the room when you shut off the aquarium light. Turn it off after they settle down.
All animals prefer a daylight/nightime cycle. It's just natural for them. Their bodies seem work more efficiently and are healthier with a more consistent cycle.
