It depends a bit on the species (of which there are hundreds) but there are two common characteristics that work for many. Males often get bristles on the leading edge of their pectoral fins (or these are larger in males than in females). Also the profile of many catfishes is different if looked at from above. Females tend to be "wider" when viewed from above, while males are more slender.
In fishes like bushynose plecostomus, a male gets a much larger "bush" on the nose than does a female.
