how can I understand my pet is a tortoise or turtles?

You will just have to search for pictures in order to identify. I do not have a picture of your pet, so I cannot say.

A tortoise usually has thick Elephant-like legs and obvious scales on the legs and about the head. A turtle may have webbed feet and live in water, or it may live on land. Land turtles usually have smoother skin on the head, and may only have big scales on the front half of the fore limbs. The fresh water turtles will have smooth skin on both front and rear legs and on the head.
