i have a water dragon a little over 2 and i never seem to see when hes shedding never see any on the substrate or anything

thank you for your question.
The old skin is often eaten by the reptile. But you should see signs of shedding, like dull or whiteish skin, especially since agamas don't shed all in one go.  It's possible that the skin doesn't shed properly for some reason (humidity too low for examlpe), I recommend seeing a herp vet to rule out any health problems.
