I realize this but my problem is that I cannot get him to eat anything else. If I replace it or try putting pellets in and remove what he does eat out of the mixture he does not eat anything and then he stops drinking. I need to know what I can do to get him swithced to a healthy diet without him doing what he has done in the past which is to quit eating and drinking completely.

Dear Nancy,

If you read my response carefully, you will note that I already have suggested what you can do to help him get his appetite back:  have his molars checked.  I cannot overstate how important this is.

If he stops eating and drinking completely, then he has a health problem, not a picky eating problem.  And until you get that problem diagnosed and treated by a good rabbit vet, you might have to force-feed him, as per the instructions in this article:
