Eyes rolling back.

I've noticed that when he stands to eat a carrot from my hand his eyes rool back when he bites.  Up to about a third of the eyes would be white as he rolls them back.  Maybe it's a combination of biting and standing that makes the eyes roll.

Yes, some rabbits get so enthusiastic that their eyes roll back a bit and the nictans extends when they're eating something they really like.  :)  I have a great picture of our big, red Gryphon eating lettuce, and he looks just as you describe.
