After reading about guinea pigs and their need for socialization, we acquired a second female guinea pig, who
we believe to be several months old. Should we wait until
the baby is older to introduce the 2 guinea pigs and house
them together? Or is it OK to put a baby with an adult?

A baby is the best choice for housing with an adult piggy as a new cagemate. Piggies love babies and usually introducing a pup causes less dominance issues than introducing an adult. As soon as the 2-4 week quarantine is over, go ahead and begin introductions. Good luck.
