Sorry as this isn't your area of expertise but,
My dog just recently has been falling down, almost collapsing randomly. And thereafter he has had elevated breathing and he looks very paniced. It has been happening more often but we cannot get him to the vet for a nother few days.
He is a medium sized dog about 50 lbs, and is about 10 years old.
His fits of breathing fast also have been lasting longer each time.
We have been feeding him soft meat or dog food more lately as he has been having trouble with the hard food, And the last time he collapsed he urinated where he layed.

Is there anything you can help us do to keep him more relaxed or calm until we get him to the vet?

It sounds like your dog is seizuring Paul. The fact that he urinated when he was down is a sign of a seizure. Most dogs his age don't get these and when they do it is usually not a good sign.
A full blown grand mal seizure consists of the dog falling over, stiffening up his limbs, having a look of staring off into space, vocalizing, urinating and sometimes even defecating on themselves, and other things. He may have all or only some of these symptoms.

Many things can cause these, even heart problems. It is really hard to say. Brain tumors, tumors in other places, neurological issues, cancers, many things can cause seizures in an older dog.

Epilepsy is a possibility but it is uncommon in dogs over 5 yrs of age.
There is nothing you can do while he is seizuring except stay there with him so he doesn't fall off anything or hurt himself in anyway.
Petting him won't help and sometimes makes it worse. Just stay near him until it passes. They are very disoriented afterward so you want to make sure you get him to a safe place if he isn't in one already.
You need to get him into the vets as soon as possible.
