Training questions about my Giant Schnauzer

Question
I read a crate training Q/A on this website and wanted to ask a question of my own. At what poing can I consider my Giant house broken? I bought him home at 14 weeks old from a Giant breeder. His name is Samson and he is 5 months old now. He is very playful, listens well, learns fast. When I first brought Samson home I never used a crate but I used to wake up around 3 A.M to let him out for pee, and if he ever went inside (which didn't happen to often) I told him with a stirn voice "Bad boy, that's a NO!" and put him outside. After a few weeks he started sleeping through the night and would go out first thing in the morning and go pee. I always used the same door to let him in and out so now he goes and sits by the door when he wants out(he'll go pee and come right back in). When we are home it is like a routin. He has done so good in the potti area that he earnded our trust. One night my husband and I had to run an arrand and I decided to leave Samson inside(we let him out before we left so he could do any deeds). When we came home it was a fiasco. He had gone pee and poop all over the house... I mean I don't think he's ever done so much poop in one day.  I started thinking that he does this out of anger towards us because normally he will hold it till he goes outside or when we are home. I can't be expected to take him every single time I have to go somewhere, can he ever be truasted to stay in the home or will I have to leave him outside each time.
He has only done this on 2-3 occasions (when I decide to leave him in), every other time he GOES outside and get's praised with a "Good Boy" when he comes in so I assumed he was house broken? Do dog's have accidents  or do they poop and pee inside for attention?

At what poing can I consider my Giant house broken?

Answer
You have a dog that needs a lot of physical and mental exercise. He's bored and is trying to get your attention.

When he goes out, the praise must be within 3 seconds of his potty. The dogs short term memory is about 3 seconds, after that they don't know what you are talking about. Go with the dog and every time he goes, GOOD BOY!! and add a pet, rub or whatever other affection you care to use.

We generally suggest that the owner have the crate in a family area, aka kitchen etc, where the dog can use it as a den, sleeping, eating, toy, snack and no one bothers the dog there. The door is kept open so the dog goes in and out as it wants, then only shut the door for sleepy time. With most dogs, you can leave it open at night after the dog is comfortable staying all night.

Feeding time and potty time go hand in hand. WE let the dog out then prepare breakfast, dog comes in, and must do a command (sit, down shake, whatever) and then the dog gets to eat. When done, back outside for potty, then in. The second trip is because at meal time thay tank up on water, and this gets them void before the just drank water says it wants out.
