Whenever we leave the house, my dog finds some sort of cardboard to chew on: usually record albums or books. The strange thing is he NEVER chews the the pages of books or the paper in record albums, ONLY the cardboard. He didn't used to do this. He didn't do this too much as a puppy. As a 7 year old, though, he is doing it more.

Why is my dog doing this? Is there some nutrient in cardboard that his body is craving that we are not feeding him? I just think it's strange that he only chews cardboard.

I don't think it's a matter of him lacking in some nutrient.  He may just like the taste of cardboard.

You may want to look into some of the "enrichment" toys that challenge a dog and keep him busy.  You could leave one or two of these around, which may prove to be more interesting to him than cardboard.
