OK i have a 9 yr. old 16h thoroughbred/percheron and 2 quarter horses ages 3 year old stallion and 6 year old mare they are stabled we feed them 16 percent protein grain feed and hay we ride them for fun. My question is how many lbs. of alfalfa hay can we feed them? they seem to reject grass hay when feeding them alfalfa

If you're only using them for pleasure riding you certainly don't need the 16% grain mix.  16% is also too high protein for adult horses and they don't need that high energy.  Alfalfa hay and access to pasture (if possible) should be sufficient.   If pasture is not available keep giving them grass hay during the day (use the alfalfa as a 'meal') and overnight.
