RES are often nippers, and it's not really something you can train them out of. The only thing I can think to try is to give treats (bits of chicken, mealworms, etc.) when he's being handled (use forceps to avoid being bitten), and if he nips, immediately return him to his tank and stop the treats. Then try again in a few minutes. He might come to make the association that biting means he goes back in the tank and no more treats, but I wouldn't hold my breath. For the most part, you just need to be careful in handling and keep your fingers out of the way.
