on average how much energy does a hamster produce running on their wheel for 1 minute?

I'm afraid I don't know the answer to your question.  I do know that some people have carried out research into this and managed to attach a light bulb to a hamster wheel, which was illuminated when the hamster ran in his wheel, but I am afraid I have no idea how much energy they produce - judging by the noise from all mine running in their wheels at night it is probably a lot!
