We got our cocker when she was 5
Months. She came from a house full
Of happy social dogs. Two years later
She is shy with strangers, peers around  corners. We have a busy happy house! What happened? She also hates riding in the car she poops every time

Car riding should not be used to only take the dog to unpleasant places like the vet or the groooming shop. Take short trips around the block and reward the dog... like feeding her in the car when you get home.  Take her out to places like PetSmart and PetCo that allow visiting dogs.
