My cavalier has dried blood or something that is dark and crusty in his ear and it is redder than usual. What could this be.

Cavvies often get something called PSOM  (Primary Secretory Otitis Media) where the mucus builds up in the middle ear until the eardrum ruptures.  You should have your vet check the dog for that.  When the eardrum ruptures all kinds of stuff drains out and will accumulate in the ear canal resulting in dried crusty material.  Of course, ear mites can also cause that so an ear exam in needed.
