So my leopard gecko has been having a hard time, I just recently moved via car and, while I did everything I could to keep her comfortable durning the move, she stressed out.  She then recessed to her hide for almost 2 weeks, hardly eating.  She seemed to be back to normal recetly but then she went back to her hide for another week.  Then she came out and started shedding.  She has almost completly shed, but the skin on her head wouldn't come off.  Its been a week and it still hasn't come off.  It seems like its obstructing her vision so she can't see her food so she hasn't eaten.  I would like to help her out but I am not sure how to do so.

Its very normal for them to stress as you describe. Its almost impossible to prevent the stress of moving. She will get back to normal before too long. Sounds like you did all you could to lessen the stress for her...
Do you use a humid hide for her?  Its best to have it on the warm side of the tank.  The humid hide can be very simple.  I use a small plastic Folgers coffee container on its side with a hole cut in the lid.  Inside it I have what they call the terrarium moss which I keep moist.  They need to have access to this at all times.  Its where they go to help loosen their shed.
As to her stuck shed, you can mist her with warm water, careful, not too much pressure on the spray. You can then take a moist cotton swab and very carefully try to push the shed off.  Be sure to check her toes and tail for any remaining shed also.  If there is stuck shed on her toes and the misting doesn't help you can try a warm(88-90 F degrees) water no deeper than her elbow when laying down. If there is shed that still doesn't want to come off, you can apply a tiny amount of Vaseline to the area but do not apply it near the nostrils or over the eyes. If you are using sand, which should not be used due to the dangers it presents to leos, remove the sand if you have to use the Vaseline.. Be sure to provide the humid hide if you aren't already.  If you do provide one, try using something different inside it.  I tried several things in mine and found the terrarium moss the best. Also, when misting, do not over mist the cage as too much humidity isn't good for a leo.
