French Angora weight question.

I bought a french angora bunny, a female, she was so badly matted we had to cut her hair very short.  For the first two weeks she did not drink or eat much, she now has increased her stool and urine output to normal.  I believe she was dehydrated and starving.  She is now pooping a lot more, but she does not seem to be gaining any weight.  I feed her as much as she wants.  Am I doing something wrong.  She has plenty of pellets, carrots, celery, and bread.  Her stool is firm, and a good color.  I have rescued other bunnies in the past like this.  Most have gained weight by now.  Is her metablilm higher because of all the hair.  Please suggest anything.  She is a sweetheart.  But I want more than skin and bones.  Thank y ou.

hi marilyn -i would notfeed her bread as it blows them up-all i would feed it topclass pellets and water to drink a bit of celery now and again she how she gets on and keep weighing her weekly if she does not gain weight i would let a vet look he over as it may be something else.
