Answer
My motto is....."never do anything once that you don't plan to continue" with a Pot Bellied Pig!
It is unfortunate that the breeder didn't give you feeding instructions when you took your piglet home.
It should have been started on piglet chow before it left for your home.
You need to find a feeding dish that he can't tip over.  This will help from being so messy and wasting the food.
You will need to keep giving him his oatmeal and milk but add just a very small amount of the pellets in with it.  Start by cooking the pellets in with the oatmeal so he can't separate them.  Ad just a bit more every few days.until he is used to the new taste of the pellets.   Now mix in a few pellets every day adding a bit more every day.  He will eat them without even knowing it.
You can go to royaldandie.com and get the dishes that will attach to the side of a wire pen.  If you don't have a place to hook these to find a way to attach his dish to something that he has to stand on to reach it.
If he is standing on a board with the dish attached to it he won't be able to tip it over with his nose.
This web site also has the piglet chow that he should be eating and a very good multi vit/min supplement that he should have for optimal health.
While you are there the infinity plus training harness/leash is also a must for your new piglet.
Good luck,
Patty
