What is a good, safe and short ( 1-2 weeks ) science experiment I can do with rats?

Answer
You can always do the rat mase where The student had three different rats run a series of three different mazes in combination with three different audio influences (rock music, classical music and no music) to see which environment would enable the rats to learn the quickest. This is a well thought out complete project, which includes pictures, graphs, sources, etc.
