Question
We just got a jack russell from the humane society. He is about 5 years old and seems to be pottie trained for the most part. He started having accidents when we would leave, even if we just took him out and were only gone for a few minutes. So, we have been crating him when we leave. When we come back, we'll take him out right away to go pottie. The problem is, is that immediately after we take him out, he'll come back inside, and sneak off into our room and poop. If we catch him, he'll just roll over on his back submissively. I feel like he is doing it because he's upset that we put him in the crate. I don't know if that true or not. What do we do?

You are doing everything right -
Keep him crated when you go out,
take him outside when you get back, but don't let him back in the house until he poops.  If he just won't go, try putting a baby gate up across your room temporarily until he gets over this adjustment period.  You'll just have to keep a closer eye on him for a little while. I have no doubt that he'll learn the right thing to do after a little time.  Thank you for rescuing him. They are a wonderful, fun and loving breed.
