Hilary,
  I have a 3 year old lab-mix who has been the picture of health until about 2 weeks ago. He has lost his appetite and drinks water incessantly. This of course means going outside more often, and as soon as he comes in he "loads up" again. There haven't been any changes to his food and he
is on no medication. He is a "house" dog and is in a nice air-conditioned house all day long.
Do you have any thoughts as to what's going on here? I appreciate any advice you could give me.

Hi David.  If you have used any flea products EXCEPT Frontline/Frontline Plus, I would take him to your veterinarian immediately.  These over the counter flea medications can cause these kinds of symptoms, ranging from your dog's symptoms and rashes to siezuring, hind end paralysis and death.  These products are very dangerous.  Hartz, Biospot, Zodiac, Advantage, Advantix, ect...to name a few, are all harmful.
I just had to tell you that, because the symptoms you have described are very similar to the symptoms these products cause.
I would have to say, regardless of the flea product, your dog definitely needs a veterinary visit ASAP.  When a dog will not eat, there is definitely something wrong.  Because of his age, my first guess would be that he probably ate something he shouldn't have.  Only your veterinarian will be able to tell you exactly what is going on, as blood work will be needed.
