i,m 34 years old. 1 of my horses that is 19 years old, always likes to curl up her lip. i heard it was to free up their olfactory sences. what is that? i also have a 3 year old horse that was lunged alot befor i got her, and she doesn't like for you to touch her ears. could you tell me why? it took me 6 mo., befor she would come to me without me having to chase her. i think i've come along way with her. can you give me some tips?

Olfactory is smell, horses raise the upper lips to open the nostrils to gather more air and smell, normally when they smell a mare in heat.

Touching ears is just desensitizing the ears.  Remember nothing is ever the horses fault, they only react to what we do, so if you horse does something right or wrong, it is becuase of you.  So don't blame the horse.  Your horse runs from you becuase you chase her, period.  If you did not chase her should would not run.  In order to catch a hard to catch horse I tell people,STOP trying to catch them, just go and see them and send time with them.
