All horses are individuals. I am not quite sure to what you are referring when you say "strong or sensitive jaws." I suspect that you might be referring to strong or sensitive mouths? If so- this is created through good or bad training not through genetics. Horses that are handed by trainers with rough hands, who are looking for short cuts to success will often try to
"bully" a horse into submission- creating resistance and a hard - mouthed horse. A horse brought along with respect, patience, and a soft hand will develop a soft and submissive mouth.
