I have 4 males in separate cages. Then I have three that I think females. Then I see some "activity" going on. How can I tell which is a male or female?

rabbits of both sexes, when there are two or more of them together, one will be the dominant rabbit. What you are seeing in the females that live together is a dominance stance, not any sexual coupling.
You'd see some testicles under the tail if they were male (at least at some point).
I would ask your good regular rabbit vet to show you how to safely (for the rabbit) sex your rabbits. You wnat to do it safely because you don't want them injuring themselves while you quickly examine them.
