Answer
You probably didn't do anything wrong with the cold water so stop blaming yourself.  While a draft or chill might lower their immune system and leave them prone to a respiratory infection, sometimes it's just a coincidence.

A day of sneezing isn't significant in a bird, especially if there's no other symptoms such as nasal discharge, open mouth breathing, feather fluffing, going off their food/water, staying at the bottom of the cage and so on.
Since you're noticing difficulty breathing and so soon after her bath, chances are you caught whatever this is very early - and that's the BEST thing you could do.
You must have her seen quickly though - preferably tomorrow by her vet. Even if your vet needs to open especially for you, it's going to be worth it for the security of knowing she's ok.
In the meantime, make sure she's calm and comfortable.  If she's fluffing she's going to need a heat source so you might want to attach a heating pad to the side of her cage (layer a folded sheet between the cage bars and the pad so she can't bite through the bars and get to the pad) - put it on low and cover her cage (leaving 1/2 of her front door uncovered so she can see out and air can circulate).
Another option is a 'rice sock'.  Take any thick, clean sock and fill 3/4 with raw white rice. Knot the end and microwave it for about 1 1/2 minutes.  Shake it out to distribute the heat and be sure it's not too hot.  Place this in the bottom of the cage and cover as described above to help hold the heat in.
No matter what - she needs to be seen.
Good luck and God bless
