Question
I have a 4 yr old Shitzau who has started pooping in the house.  It seems like this mostly happens after the grandkids have stayed with us or if I have been gone alot.  I'm sure he knows he did wrong because he goes upstairs to do it and will sit and watch me when I go upstairs and the turn his head away and not look at me or go to his kennel.  How do I stop this behavior?    Thanks for the help.

It sounds it is a deliberate behavior.  Still, a vet check won't hurt.  Discuss neutering if not already.  

The quickest solution is not let him loose when you can't watch him.  Close doors or use gates to keep him in the same room.  Even if a puppy slips through and makes it upstairs, all the door upstairs are kept closed.  I have a short length of chain fastened to my computer desk.  With more mats around the chair mat, this gives a place
where the puppy is with me, but about as controlled as in the crate, while
still allowing me to get some work done, or at least answer All Experts questions.

Longer range, obedience train him.  The key to most behavior problems is approaching things using the dog's natural instincts.  Dogs see all the people and dogs in the household as a pack with each having their own rank in the pack and a top dog.  Life is much easier if the 2 legged pack members outrank the 4 legged ones.  You can learn to play the role of top dog by reading some books or going to a good obedience class. A good obedience class or book is about you being top dog, not about rewarding standard commands with a treat.
