My female boxer is almost 6 years old.  She has never been bred and I have found the perfect male for her; he is 7 years old and has never been a sire.  My only concern is her age and his. Will this be too much for my female to deal with (the mating AND the birthing)?

She is too old now. You missed your opportunity. 2-4 is breeding age.

Boxers average life span is 10 years. She is at the nearer end of life. It would be too hard on her body and emotionally as well. It is worse on dogs than humans.

He however, does not matter. Sperm is sperm regardless of the male's age.
