I have two Siamese cats...both sexes..they keep scratching at their ears. The Vet said it was a yeast infection in my female and gave me some ointment. It's almost impossible to get the cream in her ears. She folds them down and keeps moving her head. I have no one to help me and she ususally wins the battle and hides for hours and I can't find her and then get busy and forget it. Is there a way to get rid of these infections by a shot or by some other methods? My male also scratches his ears. Neither has an ear odor and my females ears are dirty, but the males is not. Both seem to be in good health otherwise.

I'm afraid I've never heard of anything that can treat a yeast infection in the ears besides an ear drop.

However, I will say that yeast infections are often secondary to another ear problem, such as dietary allergies or ear mites.  Since both cats seem to have itchy ears, I wonder if there's something underlying.

I assume the vet has ruled out mites.  What food are you feeding?  Those containing corn and wheat are most likely to cause an allergic reaction that causes itchy, waxy ears leading to yeast infections.  I think if the food you feed contains any form of corn or wheat (flour), I'd see about switching to a higher quality food, just in case.  It's probably not going to help existing infections, but it may help prevent them.

As for getting the drops in your female's ears, have you tried wrapping her tightly in a towel?  This is the only way I am able to clean and medicate many of my cats' ears.  You wrap them up like a burrito with just their head exposed.  Then I hold their body between my legs and use one hand to hold their head still and the other to clean their ear.  It stops them from squirming and scratching.
