Hello,
Lately my cat will be curled up and sleeping, when all of a sudden, she sits up. She will start meowing rather loudly for about half a minute while I talk softly to her (essentially a two-way conversation), and then lies back down. It happens at different times of the night, not sure about daytime hours, but doesn't happen all the time.
Is my cat having some kind of dream or is it possibly some kind of seizure or dementia? She's 7 years old.

I don't think that a middle aged cat is at much risk for dementia or seizures (unless there was some sort of toxic substance that she came into contact with. She probably is dreaming and telling you about her dreams. Enjoy it, keep talking to her, you may be surprised what she has to say. On a cautionary note if there is anything else about her behavior that seems odd or "off" don't hesitate to take her to the vet just to be sure that everything is okay. Have fun with your middle aged cat, this is a great time of her life. She is no longer young and rambunctious enough to break family heirlooms or lamps. She is likely in reasonably good health unless your vet says otherwise. Ultimately it is time for you and your cat to enjoy each other and spend time talking about the dreams you have and the mysteries of life. Enjoy your little friend, she is in the prime of her life.
