Mouse babies get the first fur with three days and will leave the nest occasionally with seven days. Their eyes open when they are ten days old and they have all their fur. The opening of their eyes is the best way to judge their age because you can see it without disturbing the nest and because it happens at ten days of age for most if not all of the babies. You need to separate males and females when they are 28 days old, the females can stay with their mother and the males with each other (but they may start to fight soon).
