finding one mouse dropping

what is the likelihood of finding one piece of very dry mouse excreta on a table on the second floor of an old building with no other droppings in the vicinity?

Not unlikely. Although having a lot of wild mice in a home leads to lots and lots of mouse droppings, often if there is only one mouse you might just run into one poop. The mouse might be long gone, too.
