hi there, i have a 2yr old toy pom that we have trained to pee
outside. The last year or so he has been jumping on the beds
knocking off the pillows and almost every evening the last
month he would go into my room and pee against my pillow
on my bed. What can i do to stop this behaviour

It sounds like he is in charge of you and claiming his dominance over you.  You need to take charge of this dog by giving him obedience training and walking him.  Also, until he learns you are the boss he is not allowed on the bed.  Until you have complete command of him he will "own" you this way.
Make him sit before you feed him, eat before he does and make him wait.  Make him sit before you go out.  These are small things, but the training of him with commands like sit, stay, down are important.  When you take him out and he goes to the bathroom, tell him "good potty" (or some other term if you want).  When he finally goes to the bathroom by you saying "go potty",  then you will be able to say "NO POTTY" and point to the bed.
For now though, he is not allowed on the bed.  Keep taking him off and putting him on the floor in his own little bed.  Watch him and when he goes to jump up, don't let it happen, tell him "NO".
You have to change your attitude toward the dog and you should be feeling insulted that he has tried to take charge.  When you take the attitude that he is NOT the boss and you will not be treated like this, things will change dramatically.  Don't get mad, the changes are inside of you, the actions will be consistency.

PS  when he can handle himself, he can come up on the bed, but wait until he is being good for about 6 months and then when he finally goes up on the bed, watch him carefully.  First sign of a lifted leg he is to be whisked off the bed.
